VANILLA FORBIDDEN RICE MILK (Winter Longevity Guide)

Ingredients:

1 cup forbidden black rice 1 cup walnuts
3 cups warm water
1⁄2 tbsp vanilla extract 1⁄4 cup coconut sugar (or to taste)

Instructions:

Rinse the black rice well under cold water. Blend the rice, water and cinnamon in a high-speed blender. Let it sit at room temperature for a minimum of three hours, or preferably overnight. Pour the mixture through a fine-mesh strainer or a cheesecloth-lined sieve into a large pot or saucepan. Discard the strained rice solids. Stir the coconut sugar, vanilla, and salt (if using) into the strained liquid. Place the pot on the stove over medium-low heat. Bring the mixture to a simmer, stirring occasionally, until it is warm and slightly thickened. Do not let it boil. Serve warm. ‍
